I want to make a seafood boil but don't want to boil all the flavour away in a vat of water, would it turn out alright if I simmered it all in a bit of butter and old bay, spoon basting often?

Should I dilute the butter a bit with a little water? Also, anyone have success with simmering imitation crab legs in butter to make it more realistic?
