Raw Pork? What about trichinosis?
Raw beef is generally safe, not so much ground beef because it’s so industrialized it’s pieces of thousands of cows so the risk of bad shit is higher. Plus every part has been exposed to the air and surfaces and could be contaminated.
But you can eat beef raw. I’ve done it, venison too. We were all warned against doing so with pork, or obviously poultry.

It’s a common fast food sold at butcher shops. Handling is not much different to sushi which you also wouldn’t want to eat without proper refrigeration.
If it’s not safe to eat in your country, your food hygiene laws are lacking.

What do you consider a proper handling?
Basically being really fresh and made one the day of consumption. Also cooling it well and making sure the pig was healthy.
Saw a YouTube video on it once. Tldr, the bad worms spread when an animal eats the meat of another infected animal. So, if you raise your pigs strictly vegetarian, they can’t catch that type of worm.
Also very strict testing and procedures, of course.
